I volunteered to make something to sell at a charity bake sale and as luck would have it King Arthur Baking send me an email with this recipe, Apple Cider Doughnut Holes.

I made them pretty much as the recipe specified and decided next time I would omit the cardamom. Maybe there was too much, but it overpowered the sugar/cinnamon coating. Live and learn. (They were pretty darn good anyway.)

I reduced a half gallon of apple cider to make the boiled cider and mixed my own apple pie spice using the ratio of 4::2::1 cinnamon::nutmeg::allspice.
